A few fun facts about lavender…

  •           Did you know that lavender flower extract can help relieve headaches?

  •           In Elizabethan times, when bathing was considered rather optional—if not downright suspicious—lavender was a go-to remedy for unpleasant odors. People rubbed it on their skin, perfumed their bed linens and clothes with it, and even added it to their baths.

  •           In European culture, lavender flowers were regarded as a symbol of love. In many countries, they had their own role and symbolism in engagements, weddings, and other romantic milestones.

  •           It was believed that planting lavender near the home brought peace and love, happiness and prosperity.

  •           Lavender was even found in the tomb of the Egyptian pharaoh Tutankhamun. After lying there for about 3,000 years, it still retained its fragrance.

Tea Cream

Ingredients:

·         250 ml heavy cream

·         125 g fine sugar

·         4 egg yolks

·         2 tsp gelatin

·         20 ml strong brewed tea essence

·         1 vanilla bean

Preparation:

  •        Mix the previously brewed strong tea with the cream. Add the seeds scraped from the vanilla bean. Bring to a boil in a saucepan, then set aside to cool.

  •        Whisk the egg yolks with sugar until thick and fluffy.

  •        Dissolve the gelatin in 20 ml of lukewarm water and add it to the cooled tea–cream mixture.

  •        Add the whipped egg yolk mixture to the saucepan and stir until combined. Beat everything at high speed until the cream is airy and thickened.

  •        Chill in the refrigerator and use for filling cookies, cakes, tarts, and more.
