Pai Mu Tan, also known as Bai Mu Dan or White Peony, is a Chinese white tea with a rich history. It originates from the Fujian province, and its name refers to the appearance of the buds and leaves, which resemble the petals of a white peony flower.

A few facts about this remarkable tea:

·         The production of Pai Mu Tan began during the Song dynasty (960–1279), when the tea was served only to select guests.

·         In the Ming dynasty (1368–1644), it became popular at the imperial court and was considered a luxury product.

·         The city of Fuding in Fujian is regarded as the birthplace of White Peony tea, thanks to its perfect growing conditions.

·         To produce Pai Mu Tan, usually the first two leaves together with the bud are harvested in early spring. The leaves undergo partial oxidation, mostly through sun-drying and indoor withering, and are later gently heated to stop fermentation. The entire process is designed to minimize damage to the leaves, preserving their delicate taste and aroma.
