If You Like to Know More – Connoisseur’s Curiosities

The secret of Chinese Sencha’s remarkable taste lies in its simplicity. The production process consists of only – or perhaps as much as – three steps.

  •           First, the harvest. The most prized leaves are, of course, those picked in spring. But harvesting also takes place in other seasons – sometimes even up to four times a year, depending on the region.

  •           The freshly plucked leaves are then exposed to hot steam.

  •           Next, they are dried with hot air, and finally rolled into the desired shape. There is one more, most important rule: sencha leaves must not be left to rest, as they would begin to oxidize. This is crucial not only for the tea’s flavor but also for its beautiful color.

In a small town, there was a teahouse.

One day, an old man stepped quietly through the doors of this well-known little shop. He carried himself with mystery, but his gaze was sharp and daring. He asked the owners if a phoenix had passed through. Somewhat puzzled, they replied truthfully: no. Yet, as it would later turn out, that wasn’t entirely the case.

The old man then asked if he could look around himself—just to be sure, so he could feel at peace. The owners, smiling warmly, agreed and gestured for him to make himself at home. Busy with their work, they hardly paid him any attention. Out of the corner of their eye, however, they noticed him walking slowly, nose twitching slightly, as though he were trying to sniff out the phoenix rather than spot it among the shelves lined with tins of tea. After a moment, he concluded that the phoenix had indeed been there but must have flown on, and that he too would now take his leave. The owners politely bid him farewell, amused by the odd encounter, and returned to their tasks. That’s when they noticed a large box on the counter, with an envelope on top that read: For Agnieszka and Piotr.

They guessed it was the old man’s “forgotten” parcel, though they were astonished at how he knew their names and when exactly he had left it there. Curiosity quickly replaced surprise. They opened the letter first. Inside, it said:

"You have kind hearts. You didn’t drive me away from your shop. You let me search for something I may never find. That’s why I leave you this chest of tea from my Chinese garden. Create from it something that will symbolize the phoenix I’ve been seeking for thousands of years."

And so, what else could they do? They created China Sencha—and they still wait for the old man to return one day.
